Description
These muffins are a fantastic snack for both little ones and adults alike. Cut them in half, pop them in the toaster and butter them for a warm treat for Mum and Dad!
Ingredients
300g Self-Raising Flour
1 Tsp Baking Powder
250ml Whole Milk (or milk substitute)
75g Unsalted Butter, melted
1 Medium Egg
100g Grated Cheddar
1 Tbsp Sun-dried Tomato Paste/Purée
Instructions
Pre-heat your oven to 200C/400F.
Mix the milk, egg and tomato paste/purée in a mixing jug.
In a bowl, mix the flour and baking powder with the cheddar.
Melt the butter in the microwave and pour into the flour mix, stirring it through.
Add the milk mixture and combine thoroughly – it should form a thick batter-like consistency.
Spoon the mixture into muffin cases/silicone muffin moulds and place into the oven.
Bake for around 20 minutes or until the top is golden brown.
Allow to cool and enjoy!
Notes
Storage: Store in an airtight container for up to 3 days in the fridge, or freeze on the day and use within 3 months
Suitable: From 6 months onwards. Simply serve as is!
