Nando’s chicken is one of those pleasures in life… it is just superb. However, the level of spice and the salt content may usually be a little high for infants, and therefore making your own modified version is perfect. This Nando’s Fakeaway chicken takes the heat out, but leaves the flavour in, making it perfect for little ones. As they get older start to experiment with varying levels of spice, although maybe stay away from the Xtra Hot for a while!
1 Tsp Sweet Paprika
1 Tsp Cumin
1 Tsp Ground Coriander
1/2 Tsp White Pepper
1 Tsp Oregano
1 Tsp Onion Powder/Granules
1 Tsp Garlic Powder/Granules
Glug Olive Oil
4 Chicken Thighs
- Mix all of the ingredients, except for the chicken. If using garlic and onion granules then consider grinding them first in a pestle and mortar, although this isn’t essential.
- All the chicken to the marinade and leave for a few hours, or preferably overnight.
- Either bake the chicken in the oven (180C/350F) for 20-25 minutes, or cook in a cast iron skillet/non-stick pan for 15-20 minutes. Ensure that there is no pink remaining in the chicken before serving.
- Serve with your favourite Nando’s sides, such as sweet potato mash, pitta bread, hummus, rice etc.
Storage: Store in an airtight container in the fridge for up to 2 days, or freeze the marinated chicken prior to cooking and defrost thoroughly in the fridge when you want to use it.
Suitable: Suitable from 6 months +. To serve to a young child (approx. 6-9m) remove the skin and pull the meat apart until it’s like a pulled chicken consistency. I use chicken thighs for this recipe because the fat content makes the meat more succulent and easier to pull apart (and they taste nicer too!). For older children (approx. 9-18m) consider cutting into strips and encourage the use of a fork to pick these up. Judge the transition from each type of serving depending on how many teeth your baby has and how they are progressing with their chewing, as they will have to be able to bite the chicken off and chew this for the 9-18m method of serving.
